Eggplant Salad

Ingredients:

4 Young eggplants
1 tablespoon kalamansi juice
1 onion
2/3 cups coconut cream
Salt to taste

How to prepare :

1. Roast eggplants in oven or over charcoal heat.

2. Peel onion and slice crosswise very fine.

3. Add kalamansi juice.

4. Peel and mash well the eggplants.

5. Mix and blend well the eggplant and onion.

6. Season to taste with salt.

7. Add coconut cream.

Yield: 4 to 6 servings.
